This Historic Recipe, Lime Jello Deluxe by Florence (Slack) Bradley, comes to us from “Book of Recipes – commemorating The Seventy-fifth Anniversary of The Marthaville United Church by The Marthaville Friendship - Sewing Circle – 1955.

Florence Rosemond Slack was born on April 24, 1881 in Enniskillen Twp. to parents Tinswood and Hannah (Rawson) Slack. Florence had two brothers; Augustus and Thomas. Augustus Manford Slack (August 19, 1878 – March 29, 1948) worked in the Sarnia area, New Zealand, and Western Canada in the oil business. Thomas John Slack (July 27, 1883 - January 6, 1897) lived for only 14 short years and had suffered with a spinal disease for about two years before his passing.

The Slack family were Methodist and Florence played the organ at the Marthaville Methodist Church in her younger years (now located at Petrolia Discovery). She was also a member of long-time member of Adanac Women’s Institute.

In 1908, Florence married Richard Nelson Bradley (June 4, 1879 – March 28, 1946), the son of Edward and Grace (Campbell) Bradley.

Both the Slack and the Bradley families were in the oil business.

Florence and Richard had three sons together:

  • Edward Augustus Bradley was born on September 29, 1909. He died of influenza on October 3, 1926.
  • William “Maurice” Bradley was born on April 5, 1913. He married Mildred Jane McCreary on June 19, 1937 in Petrolia. William and Mildred had four children. Maurice passed away in 1993 and Mildred in 2001.
  • Murray Tinswood Bradley he was born on January 14, 1916. Murray married Florence Thompson on July 22, 1939. They were both from Petrolia but married in Mount Brydges, Ontario. Murray and Florence had two children and five grandchildren. Murray was a well-known local historian and antique tool collector a former President of the Oil Well Supply Company. He was also the last owner of the oil field that is now home to Petrolia Discovery.

Florence died October 13, 1965 and was laid to rest in Hillsdale Cemetery, Petrolia beside her husband Richard who predeceased her on March 28, 1946.

Ingredients

1 lime Jello powder
1 c. boiling water
1 carton cottage cheese
1 small can crushed pineapple
Celery and walnuts

 

Instructions

Let jello stand until syrupy. Chop celery and walnuts fine. Add cottage cheese, crushed pineapple, celery and walnuts. Put in mold and when set ice with softened cream cheese and decorate with walnut halves.
