This Historic Recipe, Old Fashioned Vegetable Soup by Frances Matthews, comes to us from “Egremont Road Heritage Days Cookbook”.

Frances Viola Watson was born on April 18, 1915 at Lot 27, Con 6 Plympton Township. She was the daughter of Wilmer (1887 – 1934) and Amy (Brush) (1889 – 1974) Watson and had two siblings – Carl Albert and Alma Isabell.

At Warwick United Church on May 13, 1933, 18-year-old Frances married 23-year-old Cyril Leonard Matthews, the son of Leonard and Gertrude (Bullen) Matthews.

Frances and Cyril had one daughter and two sons, who graced them with 7 grandchildren.

Frances was a member of the Uttoxeter United Church for countless years as well as the Uttoxeter Women’s Institute and the Forest Fair Board.

At 93 years old, Frances passed away on Tuesday, October 2, 2007. Her husband Cyril had passed away before her in 1990. They were both laid to rest at the Uttoxeter Cemetery.

Ingredients

2 lbs. brisket
½ c pearl barley
1 cup dried navy beans
2 qt. water
½ c onion (sliced)
½ cup turnip (sliced)
1 ½ c cabbage shredded
1 c canned or fresh tomatoes
1 c celery diced
2 tsp salt
Pepper

 

Instructions

Put brisket, barley and beans in cold water, and bring slowly to simmering point, skim it necessary. Simmer 2 hours Add vegetables and simmer ½ hr. Season. Serves 8 - 12
