This Historic Recipe, Ten Minute Christmas Cake by Doreen (Elliott) Pitel, comes to us from “Canadian Slovak Recipes” from the Alvinston Slovak Cultural Hall – 1980.

Doreen Mildred Elliott was born in 1938 to John and Cleda (Spencer) Elliott in Euphemia Twp. where she grew up with her siblings:

John (Jack) Elliott: 1927 - 2016 (married Betty Williams [1934 – 2020])
Mac Richard Elliott: 1929 – 2018 (married Luella Knapp [1938 – 2024])
George Elliott: 1930 - 2000 (married Leta Louise (Stocking) DeBruyne [1936 – 2019])
Marjorie Elliott: 1932 – 2020 (married Harry Pike [1992])

In her youth, Doreen attended Union School - S.S. #1 Euphemia (formerly Shetland) and S.S. #21 Dawn. She was an active member in Euphemia Lambton Junior Women’s Institute which, in about 1955/56 they joined the Junior Farmers.

Doreen married Louis Anthony Pitel who was born in Pod Malenica, Slovakia to Vojtech and Ludvina Podolinsky Pitel. Doreen and Louis had two daughters.

Louis and Doreen were laid to rest in St. Matthew’s Cemetery, Alvinston in 2003, and 2023, respectfully.

Doreen Elliott Pitel

Ingredients

2 1/2 cups sifted pastry flour
1/2 tsp salt
1 tsp. baking soda
2 eggs, lightly beaten
3 c. mincemeat
1 1/3 c. (15 oz.) Eagle Brand Sweetened Condensed Milk
2 tbsp. sherry or juice
1 c. walnuts, coarsely chopped
2 c. mixed peel & glace cherries

 

Instructions

Oven - 300º F

1. Grease 9-inch tube or spring form pan. Line with brown paper. Grease again.
2. Sift flour, salt and soda.
3. Combine eggs, mincemeat, Eagle Brand, sherry/juice fruit and nuts.
4. Fold in dry ingredients.
5. Pour into pan. Bake 2 hours until centre springs back and top is golden. Cool, turn out, remove paper. Wrap well, store in refrigerator.
