Ella Isabel ‘Nellie’ Clark (1906-1970) was born in Agincourt (Scarborough), the daughter of Hugh and Elizabeth (Kennedy) Clark. She married Rev. Alfred Crawford Jamieson on July 20, 1940 and moved to Dresden, where Crawford took charge of the Dresden Presbyterian Church. Nellie was active in the local community, participating in activities with the Dresden Presbyterian Heather Club. When Crawford passed away suddenly in 1947, Nellie returned to Agincourt and worked as a teacher.

Nellie contributed her Pickled Peaches recipe to the "Favorite Recipes and Quotations Recipe Book", which was published by the Rutherford Presbyterian's Ladies Aid. This undated recipe book can be found at the Lambton County Archives!

 

Mrs. A.C. Jamieson's Pickled Peaches

  • 8 quarts small firm peaches
  • 1 ½ quarts vinegar
  • 12 cups sugar
  • 1 ½ tablespoons salt
  • 1 ½ cups water
  • 3 ounces stick cinnamon
  • 1 ½ ounces whole cloves

Wash, wipe jars and put 2 or 3 cloves in each. Do not peel. Boil the following for 20 minutes; 1 ½ quarts vinegar, 12 cups sugar, 1 ½ tablespoons salt, 1 ½ cups water, 3 ounces stick cinnamon (break it up), 1 ½ ounces whole cloves. Add the peaches. Boil a few minutes, until a little soft but skins not broken. Put peaches in jars. Pour the boiling syrup over them. Seal.
