This Historic Recipe comes to us from “Favourite Recipes from Laurel Lea” - Laurel Lea Presbyterian Church, Sarnia, Ontario – Spicy Beans by Nina Wiles.

Nina Elnora Claxton was born in Sarnia Township on 2 May 1910 to John “Jack” and Annie Eleanor “Nellie” (Dunford) Claxton. Nina was one of five daughters which included Betty Marie Levan, Marion Alice Finn, Grace Helen Berry and Jacqueline “Jackie” Wyville.

Nina married Jack Burton Wiles the son of George and Harriett Louisa (Pole) Wiles. He was born on 30 August 1911 in Sarnia. They had one child, a daughter, and three grandchildren.

Nina and her family were active members of Laurel Lea/St. Mathews Presbyterian Church in Sarnia.

Nina passed away on Friday 10 May 1991 at the Vision Nursing Home in Sarnia. She was laid to rest in Grandview Memorial Cemetery, Sarnia beside her husband Jack who had predeceased her on Thursday 23 February 1978.

Ingredients

6 slices breakfast bacon
2 tbsp. chopped onion
2 tbsp. vinegar
½ tsp. salt
Dash of paprika
1lb cooked green beans

Instructions

Fry crisp – 6 slices breakfast bacon (break up).
Remove and fry 2 tbsp. chopped onion
Then add – 2 tbsp. vinegar, ½ tsp. salt, dash of paprika.
Mix and add to – 1lb cooked green beans, and heat
Serves Six
