This Historic Recipe comes to us from “Favourite Recipes of the Parker Street United Church Women – Sarnia – 1973” Commemorating the 60th Anniversary of the Church.

Olive Gertrude Farrier was born on 9 Dec 1913 in Huron County to William and Eliza Anne (Jarvis) Farrier. She had four brothers and one sister.

Olive married Jack C. Gillespie who was born on 20 March 1916 in Huron, Ontario. His parents were John and Eunice Gillespie. Olive and Jack had three children – two daughters and one son, as well as seven grandchildren.

Olive was a school teacher for several years. She was an active member of Parker Street United Church in Sarnia for fifty years. She supported many charities including children in Third World Countries. Olive survived breast cancer and for many years she volunteered her time doing house visits. She loved gardening, baking and she wrote letters to those that were ill and often took them gifts of her homemade muffins and jam.

Olive Gertrude Farrier Gillespie was a daughter, sister, wife, mother, grandmother, aunt, teacher and a community minded individual. She passed away on Monday, 8 November 2004 and was laid to rest at Resurrection Cemetery, Sarnia beside her husband Jack who had passed away on 5 March 1980.

Ingredients

1 qt. strawberries (mash them)
½ cup water, 1 cup sugar
2½ tbsp corn starch
1 tbsp of both butter and lemon juice

Instructions:

Mix sugar and corn starch together.  Mix with half the mashed berries. Add water and cook till clear. Mix in butter and lemon juice while mixture is hot. Let cool. Bake shell and fill with ½ cooled, cooked mixture. Over this pour the rest of the mashed berries (not cooked). Pour balance of cooked mixture over the top. Cool. Top with whipped cream or your favourite topping.
