Sylvia Morwood's Fruit Cake

This historic recipe from the Lambton County Cook Book - 1849-1999 - 150th was submitted by Sylvia Morwood. Sylvia Beatrice (Craig) Morwood was born on 28 July 1917 in Euphemia Twp. to Charles and Jean (Clark) Craig she was their youngest daughter and she had 11 siblings.

On 18 June 1938 at Euphemia Twp. she married Norman Morwood of Brooke Twp. Norman was born in Brooke Twp. and was the son of Charles and Sarah (Kinna) Morwood. They had 5 sons. Sylvia was a member of the Aughrim Women’s Institute, she taught piano for many years and attended church at Ebenezer Church. Sylvia and Norman were married 16 days short of their 63rd wedding anniversary. Norman passed away on 2 June 2001 at London, ON and Sylvia passed away on 12 October 2012 at Petrolia, ON. They were laid to rest at Alvinston Cemetery, Alvinston, ON.

Ingredients

¾ lbs. butter
2 cups white sugar
4 eggs
3 tsp. baking powder
¼ tsp. salt
¼ bottle coconut flavouring
2 cups + 6 tsp. flour
2 lbs. white raisins
1 cup walnuts
4 oz. slivered almonds
½ lb. citron peel
1 lb. red cherries
1 lb. green cherries
2 rings glace pineapple
2 tins of well drained crushed pineapple

Put all the fruit in a large bowl and mix salt, baking powder and flour into it. Mix the butter and sugar, add eggs (well beaten) and the coconut flavouring. Mix with the fruit very well and put in two 8x5 loaf pans and bake at 275 f for 2 hours. This cake freezes well.
